Artichoke salad

Serve next to Koki Grilled Chicken Meal


  • 1 Pack of artichoke
  • ½ Head of lettuce
  • 1  Red Onion
  • 2  tbsp lemon juice
  • 1/3 Olive oil
  • ½ tbsp Mustard
  • ½ cup Black olives sliced
  • Salt and Pepper
  • 1 Garlic crushed
  • 1 cup cherry tomatoes
  • 5 slices of toast

How to prepare:

  1. Snipe the leaves from lettuce head. Line the small inner ones in a flower shape in a serving plate. Shred the rest of leaves and add to salad plate.
  2. Line the small inner leaves of the lettuce head in a flower shape in a serving plate. Cut remaining leaves into large pieces.
  3. Cut the edges off toast or bread. Cut the white parts into cubes. In a skillet, heat 1 tbsp oil over medium heat. Add bread cubes and stir constantly until bread turns golden. You can toast bread in oven or toaster instead.
  4. In a small bowl, mix garlic, mustard, lemon juice, oil, salt and pepper. Stir to mix dressing well.
  5. In a large bowl, mix artichokes, tomatoes, onions and lettuce. Add all ingredients over lettuce leaves in serving plate. Pour dressing on top just before serving.
