Garlic Baked Potatoes

Serve next to Koki Fried Chicken Meal


  • 4 Potatoes medium size
  • 2 tsp Garlic crushed
  • 1.5 cup of mushrooms sliced
  • 1 cup of milk
  • 1 tbsp butter or oil
  • 2 tsp parmesan cheese
  • 1 cup cheddar or gouda cheese shredded
  • 1 tbsp Rosemary  chopped
  • 1 cup Double Cream
  • 1 tbsp thyme dried and crushes

How to prepare:

  1. in a frying  pan melt butter over high heat. Stir the mushrooms in the pan for 2 minutes. Add garlic, thyme and rosemary. Stir all for 1 minute then remove from heat.
  2. Peel potatoes and slice them into thin slices.
  3. In a baking dish, arrange half quantity of potatoes to cover the bottom of dish.
  4. Pour mushroom mix on top of potato layer, then layer the rest of potatoes on top of mushrooms.
  5. Pour milk over dish then add double cream on top. You may add some salt.
  6. Heat oven to 200 C. Cover potatoes with aluminum foil and place in oven for about 30 minutes.
  7. Remove cover, sprinkle cheddar and Parmesan cheese over potatoes. Return to oven for about 20 minutesand/ or until cheese melts and surface becomes golden.
